for the omelette 1 cup of chickpea flour 2 tbsp of ground chia seeds/flaxseed 1/2 tsp of each : baking powder, turmeric, garlic powder, kala namak 1,5 cup of water
optional : thinly chopped chives and/or a few tbsp of kimchi thinly sliced (or even better : kimchi brine)
Pour on a very hot nonstick pan, cook a few minutes on medium heat until it looks slightly cook on top. Add your fillings and fold. Cook one extra minute or two and serve
